In the Aztec language, Tremo means “healthy, balanced and fresh.” This historic word lends itself perfectly to wine and the winemakers behind Tremo in Spain strive to live up to their Aztec namesake. Their ultra-premium wine is their Selected Harvest. It is called Selected Harvest because it is not a wine that is made every year. Instead, the Selected Harvest is only made when the winemakers feel the vintage conditions are ideal and worth making such a high quality wine. 2007 was one of those extraordinary years. A blend of 95% Tempranillo and 5% Graciano, the grapes featured in this gem are all from Tremo’s best single site vineyards from vines that are between 85 and 100 years old. The wine is extremely dark and almost inky in color, illustrating this Spaniard is truly big and beautiful. Rich fruit with notes of jam, black pepper and balsamic notes. Truly powerful and full-bodied, it has elegant tannins, subtle secondary flavors and a lingering luxurious finish. With good aging potential, this wine is also drinkable right now and would pair nicely with full flavored rice dishes (maybe like Spanish paella), or game and meat dishes. It could also be served after the meal to be a perfect capper.
